Garlic scapes are the tender stem and flower bud of a hardneck garlic plant. Scapes first grow straight out of the garlic bulb, then coil. When harvested, they look like long, curly green beans.Scapes have a pleasant, tender green vegetable flavour combined with a sharp garlicky ‘bite. ‘ The garlic flavour is strongest in raw scapes, but still distinct and noticeable after cooking.
Garlic scapes can be used just like garlic in recipes and are very versatile. Try them in a sauté, roasted, pickled, added to soups, and more. The most tender tops of the stem and the buds are delicious chopped up raw. The entire garlic scape is edible and you can use the whole scape in pestos and other purees.
Fresh garlic scapes last a long time in the refrigerator. Simply rinse well, air dry, and then place in a glass or water, or store in an airtight container in the refrigerator’s crisper drawer.
